Delicious and Versatile "Vegan Chicken" with Soya Chunks

Let me walk you through how I make my favorite "vegan chicken" with soya chunks. It’s incredibly flavorful, packed with protein, and super versatile. You can eat it with rice, chapati, or even use it as a filling for burgers and wraps!

Ingredients:

  • 50 grams soya chunks
  • 1 onion, thinly sliced
  • 2 green chilies, finely sliced
  • 5 garlic cloves, crushed and thinly sliced
  • 1 tablespoon chicken masala powder
  • 1 tablespoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper powder
  • 1/2 cup tomato puree
  • Oil for cooking
  • Fresh coriander leaves, for garnish
  • 1/2 lemon

Instructions:

  1. I start by soaking 50 grams of soya chunks in hot water for about 10-15 minutes until they become soft. Once they're rehydrated, I squeeze out all the excess water to get them ready. For this recipe, I like to grate them finely, which gives them a texture similar to shredded chicken.
  2. Next, I heat a pan and add a bit of oil. Once the oil is hot, I add my thinly sliced onions, green chilies, and the crushed garlic. I saute these until they become translucent and the raw smell of the garlic fades away.
  3. Now comes the spices! I add 1 tablespoon of chicken masala, 1 tablespoon of red chili powder, 1/2 teaspoon of turmeric, and 1/2 teaspoon of black pepper. I mix everything well and saute for about a minute until the spices are fragrant.
  4. I then pour in half a cup of tomato puree. I stir everything together and let it cook for about 5 minutes, or until the oil begins to separate from the masala. This ensures the flavors are well-developed.
  5. Finally, I add the grated soya chunks into the pan. I mix them thoroughly with the masala, making sure they are well-coated. I cook this mixture for another 5 to 7 minutes, allowing the soya chunks to absorb all the delicious flavors.
  6. To finish, I turn off the heat and drizzle with fresh coriander leaves and a squeeze of half a lemon. The lemon brightens up all the flavors and adds a tangy kick.

My delicious and high-protein "vegan chicken" is ready! Soya chunks are an excellent source of protein, making this a hearty and satisfying dish. I love how well it pairs with rice and chapati.
